This very simple recipe has become my signature piece, and I wowed my boyfriend with it the other day.
In a pot, boil one box of penne rigate. Cook about one cup of fresh or frozen peas in with the penne.
In a frying pan, fry one tube of breakfast sausage. (If you can find a variety that has bacon ground up in it, that's ideal). Crumble it as you go. When you are about halfway done with frying the sausage, add one one-ounce package of pecans to the frying pan, crumbling them slightly.
Drain both the pot and the frying pan. Add the penne and peas to a large mixing bowl. Lightly toss the sausage and pecans into the penne. Then, lightly toss a few sprinkles of olive oil and 2-3 pinches each of various herbs. Basil, oregano, rosemary, Italian seasoning, or whatever you have handy that will work well. Plate the dish, and top with shredded Parmesan and parsley. Enjoy! This makes about four hearty servings.
