Taco Pie

This is so yummy and easy!

1 tube crescent roll dough

2 chicken breasts (cooked in pressure cooker or other method and shredded)

1 package taco seasoning

1 can refried beans

1/2 - 1 cup shredded cheese (cheddar/jack or mozzerella)

additional toppings as desired: diced tomatoes, chopped lettuce, chopped olives, cilantro, chopped onions, sour cream, salsa etc.

In a pie pan spread the crescent roll dough so that it covers the bottom and sides of the pan evenly.   Brown the crust lightly at 350.  Heat the chicken and beans on stove top and mix in taco seasoning.  Spoon into crust and top with cheese.  Bake until cheese is melted and bubbly.

This can also be made using ground beef or shredded beef or pork instead of the chicken.

Susan,

That sounds yummy!  We will definitely try this one!  I love anything put in a crescent roll.  I might even like that chicken jello stuff baked in a crescent roll!  But, then again, probably not.

I made this recipe last night for dinner and it was VERY good!  And VERY easy!!  My kind of cooking!

I've never done the chicken in a pressure cooker, but I tried this last night.  I put 2 breasts in my microwave cooker with a little seasoning & a tiny bit of water, then cooked for 12 minutes.  The chicken was perfect!  Juicy & tender.

Thanks Susan for a great dinner idea and a great cooking tip!!
