Cuban Chicken


 
Cuban Chicken
 
1 onion
5-6 cloves garlic
1 bottle white wine
2-3 chicken breasts
1 package baby carrots
1 small jar green olives
1 red or green pepper
2 packages Sazon Goya Con Azafran seasoning
 
Finely chop or blend together garlic and onion and saute in olive oil until soft.  Cut chicken into bite size chunks and add to garlic and onion browning the outsides.  Add wine (add about half at first and then pour in more as it cooks off) and seasoning packets and slow cook chicken in pan covered or slow cooker for 3-5 hours.  In the last hour add whole baby carrots, strips of pepper and green olives, including juice.  The chicken will be cooked long before hours are up if you can't wait that long but it's best when you let it cook until the chicken practically falls apart.
