Vegetarian Penne Nicoise


Penne Nicoise
 
1 lb green beans trimmed and cut into one inch lengths
1 lb red skinned baby potatoes, cleaned and cut into one inch peices
1 tbs salt
1 lb dried penne pasta
2 tbsp olive oil
3-4 cloves of garlic, minced
1 medium white or yellow onion, peeled and chopped
1 lb ripe plum tomatoes, chopped in half
1 jar kalamata olives, chopped
1/2 tsp fresh ground black pepper
3 tbsp balsamic vinegar
 
Boil 4 quarts of water.  Add beans, potatoes and salt.  When water boils add pasta.  Heat oil and cook onion and garlic until soft.  Remove from heat and stir in tomatoes, olives and balsamic vinegar.  Add everything together and toss to mix.
I usually put a little of the water from the potatoes with the olive juice and a little extra balsamic vinegar and add it later if it needs more moisture.  Which it usually does.

Do you strain the potatoes,beans and pasta mixture when it's done?


I think a friend at church brought this to potluck one time. It was pretty good!

Oh yeah, I should have mentioned that.  You drain the potatoe mixture once everything is cooked.
