Crockpot Macaroni and Cheese


This recipe is incredible- nothing but incredible.

8 oz macaroni
4+ cups grated cheddar cheese
1 1/2 cups milk
one can evaporated milk
2 eggs
2 tsp salt
1 tsp pepper

Boil macaroni. In a large bowl, mix 3-3 1/2 c cheese, milk, evaporated milk, eggs (beaten), salt, and pepper. When macaroni is cooked, drain and add to the mixture. Stir well.

Spray inside of crock pot with non-stick cooking spray, and pour the mixed ingredients in. Top with the rest of the cheese, cover, and cook on LOW 3 1/2 - 4 hours. mmmmmmmmmmm....

I made some this morning for Lutheran Campus Ministry's Easter dinner. I can't take the credit for the recipe, though; it's just my variation on a recipe a friend gave me.

This was really good. I think I will try a variation next time using american cheese instead of cheddar, I wasn't crazy about the texture, but it tasted really great.

OOOOHHHHH!!!! I figured it out. The "2 cups of milk" is if you're mixing up DRY MILK. Apparently if you use real milk, you only need a CUP AND A HALF. That should fix the soupy-weird texture. SORRY to everyone who made it the wrong way.

Sounds yummy!

I tried a mac and cheese recipe not too long ago (I'm still learning to cook) and it was kinda soupy until the next day, eating the leftovers.

I think it was because I didn't have any evaporated milk on hand :).

So ... perhaps I'll try again with this one.
