really easy marinara sauce


I cook from memory, so adjust this to your liking

dice onions, a carrot, and celery
saute in olive oil
add some garlic
salt and pepper
start adding a good red wine (not cooking wine, blech, they add salt to it so drunken chefs won't steal it)
add a can of tomatoes, diced, or stewed.
add some sugar (just whatever you can pinch between your fingers)
(if it's too runny, just let it simmer, it'll thicken.... or add a tablespoon of tomato paste and let it simmer)
then add some dried herbs, oregano, basil, a bay leaf if you must (but don't eat it).
add more wine, and let it simmer down
keep tasting it, when it makes the sides of your mouth tingle with delight it's ready
if it doesn't
add more wine, and reduce.

throw it together with some pasta
and drink some wine

adjust the vegetables and stuff to your liking
the important things are tomatoes, sugar and wine. The sugar cuts the acidity of the tomatoes.
