Broccoli/Cheese


Mock Broccoli/Cheese Soufflé


 


2 boxes frozen Chopped Broccoli


1 Egg beaten


1 Can Cream of Mushroom Soup


1 Cup Mayonnaise (For creamier 1 ½ - 1 3/4 cup)


1 ½ Cup Shredded Cheddar Cheese (mild, sharp or any way you like it--adjust as you like..I personally like 2 cups cause I support the Kalifornia Kows)


Bread Crumbs (Italian is good)


 


Pre-heat oven to 350F.  Generously (with butter or margarine grease 2 ½ or 3 quart casserole dish.  Microwave two boxes frozen chopped broccoli.  Do not over cook.  In a separate bowl mix 1 beaten egg, mayonnaise, and soup until smooth.  Pour over chopped broccoli and stir.  Add cheese and stir until cheese is thoroughly mixed into the casserole.  Sprinkle bread crumbs over the top of the casserole.  Bake for 55-60 minutes.  The top should be nicely brown and the cheese melted. 


 


My brother in law hates broccoli, but he always comes back for seconds on this one.

This sounds really good!  I like broccoli, but I LOVE cheese!!

It sounds yummy!

But can you mix in other things like chicken or pasta?

It would be great to make more of a meal out of it. I love broccoli and cheese.

BTW, where in the store do you find the bread crumbs?

Girl, Jeanine!!!  You have been gone way too long!!!!  (By the way, Shelly's email came back!)  I have missed you both!!!!!

You can find bread crumbs on the baking isle, near the Shake'n'Bake!!  Or near the flour.  I think.  Am I right, all you people who actually cook??

If you can't find any bread crumbs, then here's how you can make your own:

Take a loaf of either French, or Italian, bread. Leave it out overnight so the crust will harden. The next day, cut the loaf into slices, then place the slices on a cookie sheet/bread pan, then put them into the oven under the broiler until golden brown. Cool and let set for a few hours. Then, crumble into little bread crumbs.

Note: before putting into the oven, brush the bread slices with melted butter and sprinkle with a mixture of Italian seasoning and parmasean cheese.

Hi, ole' mother hen here. My recipe for this broccoli/cheese is just about the same and YES I mix a drained large can of white meat chicken in mine and it makes a meal all in one.. Chicken doesn't taste a bit canned either. You know the saying "TRY IT - YOU'LL LIKE IT"... Toss a little salad and pig out....
